Chocolate Mint Cookies

Some of Hubby's favorites

3/4 c butter, no substitutes
1 1/2 c packed brown sugar
2 tsp water
2 c (12 oz) semisweet chocolate chips
2 eggs
2 1/2 c flour
1 1/4 tsp baking soda
1/2 tsp salt
1 pkg Andes candies mint chips

In a heavy saucepan, combine butter, brown sugar, and water; cook over low heat til butter is melted. Remove from heat, stir in chocolate chips til melted. Transfer to mixing bowl; cool for 10 min. Add eggs, beating well. Combine flour, baking soda, and salt; gradually add to chocolate mixture. Refrigerate 1 hr or til easy to handle. Roll into 1" balls. Place 2" apart on cookie sheet. Bake at 350 degrees for 12 min or til surface cracks. Remove from cookie sheet to cool. Melt mint chips in a bowl in microwave. Spread over the tops of cooled cookies. Makes about 9 dozen.

I'm so excited about your food blog! Sounds like we started for the same reasons too.

One day my dh, exasperated after I asked him what he felt like having for dinner, went around with a notepad asking the kids to list all of their favorite meals. (It seems like when I'd ask him, he'd say something that was a ton of work to prepare, needed a long marinade time, or a salad meal in the middle of winter.) He began looking at the list to get ideas after that. Hopefully, he'll be able to go to the blog someday and have all of our favorites.

Yummy, I love mint and chocolate, so does my dad. I think that I'm gonna give these a try. Is it easy to cut the recipe in half, do you think? Thanks for posting this it sounds wonderful!

tjandjmkahrs, some of the measurements might be a bit harder to halve, but you could do it. You might want to just make the full batch though because they disappear fast! :)
