Nutty Cracker Delights

This recipe is from my grandma. There was no measurement given for the pecans, so I guestimated.

42 club crackers
1/2 c butter
1/2 c sugar
chopped pecans (1/2 - 1 c?)

Place crackers in a single layer in a foil-lined 15x10x1" pan. In a saucepan over med heat, melt butter. Add sugar; bring to a boil, stirring constantly. Boil for 1 min. Remove from heat; pour evenly over crackers, sprinkle with chopped pecans. Bake at 350 degrees for about 8 min. Immediately remove from pan, cutting between crackers. Makes 3 1/2 dozen. Freezes very well.

Cooking Notes

*Whenever a recipe calls for a cream based soup (ie. cream of mushroom), I always use the 98% fat free kind. This does not affect the outcome of the recipe unless I specifically note it on the individual recipe.

*I only use brown rice. The recipes here are for white rice unless otherwise noted. Instant brown rice can be substituted in place of instant white rice without changing the rest of the recipe. To substitute uncooked regular brown rice for uncooked regular white rice in casseroles, follow these directions.
